Why I Finally Found a Coffee That Doesn’t Panic Me

Living in Seattle. Loving coffee. Hating what it did to me.

I love coffee. Ritual. Warm mug in hands. Flavor complexity. But coffee never loved me back.

It always came with a price. Jitters. Heart palpitations. The sudden, sharp rise into anxiety followed by a crushing crash an hour later. I was drinking two, sometimes three cups a day, riding this rollercoaster like a masochist. I thought that was just how caffeine worked for people with my constitution. I assumed the jitteriness was non-negotiable.

Then I went to Italy.

Something shifted. There, I could drink several espressos. Real ones. Strong ones. And instead of shaking, I felt even. Grounded. Ready. No afternoon dip. No nervous energy. Just clarity.

When I got back to the U.S.? Disappointment hit hard.

Was I going to have to mail-order espresso from Milan just to feel human in the morning? Absurd. Impossible.

So I started digging. I’ve been listening to the mindbodygreen podcast for years—mostly in the background while doing chores—and one episode stuck. Hosts talked about how common mold and mycotoxms are in regular coffee beans. Fungal contamination. Not ideal. I didn’t know if switching to clean, organic, mold-free beans would stop my jitters. But I ordered a bag of clean coffee+. Skepticism was high. Hope was higher.

My husband needed this too. He battles acid reflux constantly. Standard coffee is basically torture for his esophagus. We needed lower acidity. Fewer contaminants. A brew that didn’t hurt either of us.

We opened the bag last late year. Made the first pot.

I got that same Italy feeling. Stable energy. Clear head. No spikes. No crashes. He noticed less heartburn. More importantly? It actually tasted smooth. We’d tried other “clean” brands. Mushroom coffees. Fancy organic roasts. Most tasted like wet cardboard or required a cup of sugar to make palatable. Not this one.

When the flavor is good, you don’t need masks.

We usually use a French press. Simple. Effective. We add a splash of grass-fed cream or clean nut milk. Done. Good to go.

My husband travels for work. He’s told me that hotel coffee is a distinct downgrade. He misses the stability. He notices the difference when forced back onto whatever stale beans the hotel stocks. So now? We subscribed. Automated deliveries of calm.
